Pancakes are delicious and can be enjoyed as part of a balanced diet! Whether you prefer a classic crêpe or American-style, these fluffy pancakes are a must-try.

And you can get creative with some scrummy toppings that are actually quite good for you. These all hit the sweet spot without maxing out your daily calorie count.

Ingredients

  • 3 medium eggs
  • 115g plain flour
  • 1 tsp baking powder
  • 140m skimmed milk
  • 1g stevia
  • Frylight

Method

  1. Separate the yolk and egg whites into separate bowls.
  2. Add the milk, flour, baking powder, and stevia to the yolks, then mix well until you achieve a smooth, runny consistency.
  3. Using an electric whisk, beat the egg whites until they’re light and fluffy. Gently fold them into the yolk mixture.
  4. Heat a non-stick frying pan over medium heat and spray with Frylight. Add two tablespoons of pancake batter to the pan, cooking for 1–2 minutes until golden. Flip and cook for another 1–2 minutes. Repeat until all the batter is used - you should get around 16 pancakes.
  5. To serve, stack the pancakes and add your favourite toppings. We used fat-free Greek yoghurt, maple syrup, and blueberries – delicious!
